How to use BBQ-AllStars’ Seasonings and Rubs:

At BBQ-AllStars, years of testing and tinkering went into our seasonings in order to come up with the unique flavors and tastes that each rub provides. The seasonings were designed to be use “moderately” on all types of food. However, we understand that people have different tastes and sensitivities when it comes to their palette. Our recommendation for using BBQ-AllStars’ seasonings and rubs is to use 1-3 tablespoons per serving. For this example, a serving is one steak, one chicken breast, one fillet of fish, one serving of vegetables, etc. Find out what works for your own individual tastes.

Using more seasoning will help form a “natural marinade” from the food’s own juices – this actually works best for longer marinating times (6-24 hours). For example, using a lot of seasoning on a larger piece of meat and letting it rest overnight in the fridge, will yield a beautifully seasoned, thoroughly penetrated piece of meat bathing in copious amounts of an all-natural marinade. The marinade can then be used to continually baste the meat during the cooking process.

Various liquids (beer, wine, citrus juice, water) can be used along with the seasoning or rub to help form an “instant” marinade. This method is best when used for shorter resting times. For example, you get home from work late and don’t have time to season a steak and let it rest for hours. Use 1-3 Tbs of Cow-Tipp’n on the steak, gently massage the seasoning into the steak…let it rest a few minutes and then throw on the grill or other cooking source. Or, if you like, once you’ve rubbed your meat with the proper seasoning, add a splash of your favorite beer, water, or other liquid to form a quick marinade. Throw the meat on your cooking source and use the marinade to baste the meat during the cooking process.

BBQ-AllStars’ seasonings and rubs can also be used as a flavor enhancer on already cooked food. Dashing Green-Zing! on some freshly cooked vegetables is euphoric. Or, say your over at a friend’s house and they just pulled a steak off the grill for you – only salt and pepper was used on the steak (not that there’s anything wrong with this), pull out your 4oz pocket size jar of Cow-Tipp’n and sprinkle some on your cooked steak…Brilliant! Also, try adding some Amaz’n-Asian to cooked/steamed rice – just sprinkle some on your rice and let all the teriyaki and ginger flavors give that bland rice the “love” it deserves! The uses for BBQ-AllStars seasonings and rubs are endless – use them before, during, and after cooking to give your taste buds the respect they deserve!

Another cooking technique that is used with our seasonings and rubs is to add them to breadcrumbs or panko for a delicious additive to the natural bland taste of breaded, cooked foods. Depending on people’s tastes, my method is to add ¼ cup seasoning to 1 cup of breadcrumbs. I also make large batches (1 cup seasoning to 4 cups breadcrumbs) ahead of time and then store the AllStar breadcrumb mixture in the cabinet for future use. Use the AllStar breaded mixture as you would normally on chicken, fish, pork, or vegetables (like eggplant and squash). I usually coat food item with flour, then dip in egg batter, then apply AllStar breadcrumb mixture…Brilliant!! Be sure to check www.bbq-allstars.com for more recipe ideas.

*Since BBQ-AllStars’ seasonings and rubs do not contain added “anti-caking” agents, the salts and sugars will tend to “stick together” when not kept in a cool, dark place. To keep the seasonings and rubs free flowing and to preserve freshness longer, keep BBQ-AllStars’ brand seasonings and rubs in the refrigerator. A cool, dark pantry will also help keep the seasonings and rubs free flowing and fresh. However, if clumping does occur, simply shake the seasoning aggressively and/or bang container on countertop. For those times when simply shaking the container does not work, remove the cap and use a spoon or fork to “chop and stir” the seasoning. Warm, humid temperatures tend to accelerate the “clumping” affect of the all-natural ingredients.
